Santai operates a fish-eating vegetarian kitchen, preparing dishes in a typical Lombok village style. Also in keeping with village tradition, food is served on a covered, bamboo platform where guests are propped up by soft cushions around a common table. This communal-style dining creates a family atmosphere for which Santai is well known.

The kitchen is open to visitors. The cooks are available to speak with, learn from or to order one of Santai's famous fresh juices. Santai serves set meals but is adaptable to special dietary needs from vegan to special children's meals. Children (under 11 years old) can be served separately, depending on their schedule, and their meals are priced lower than the adult menu (See below).
